Intense ruby red color. The nose is fragrant with an overwhelming fruitiness of ripe cherry. On the palate it is warm and intriguing, with a pleasant sensation of softness. Serving temperature 12 ° -14 ° C.
Grape variety: Teroldego on the old Schwarzmannn rootstock (V. Riparia x V. Rupestris). Training system: Double linked Trentino pergola with plant spacing equal to m. 5.00x 0.60. Three thousand three hundred vineyards per hectare. Two fruiting heads per vineyard with a total load of 20 buds. Terrain: Alluvial, gravelly, former riverbed and relative impluvium of the Noce stream, made up of pebbles, called “sassi robi”, covered by a superficial layer of vegetal earth. Vinification: Novello di Teroldego is produced with the particular technique called “Carbonic Maceration” aimed at enhancing the fruitiness of the grapes in the wine. A few days before the harvest of the Novello di Teroldego, a small quantity of grapes is harvested to prepare the starter must. The real harvest is then carried out in crates and the perfectly whole grapes are transferred into vats where the new must is already fermented. In this environment rich in carbon dioxide, released by the fermenting must, carbonic maceration takes place for about eight days at a temperature of thirty degrees centigrade. Carbon dioxide attacks malic acid, giving roundness to the must; in fact, tasting the grape it has a pleasant hint of sparkling cherry. Finally the grapes are mashed thus starting the real fermentation process in red for only two days. In fact, to refine the future wine, it is drawn off, the grapes are lightly pressed and the fermentation is completed in white. After a few weeks of decanting, it is bottled. Comment: And so the novello is finally ready to be tasted, celebrating the arrival of the new vintage.
