VINEYARD: Gurra. VARIETY: Grillo. TYPE OF SOIL: calcareous and very clayey. ALTITUDE: 75 m asl YIELD PER HECTARE: 70 quintals. TRAINING SYSTEM: Guyot. PLANT DENSITY: 5000 plants per hectare. HARVEST PERIOD: 3rd September. VINIFICATION: after destemming and soft pressing, the must decants at a low temperature and ferments at 15 ° C. At the end of fermentation it is refined on the fine lees for about 4 months in steel tanks where a bâtonneur keeps the lees in suspension. BOTTLING PERIOD: January. ALCOHOL CONTENT: 13.5% vol. TOTAL ACIDITY: 5.70 gr / l. PH: 3.36. AGING CAPACITY: to drink immediately or to age up to 4-5 years. BOTTLE SIZE: 0.75 l. ORGANOLEPTIC NOTES: A distinctly aromatic Sicilian variety, with aromas of white melon, medlar, apricot, pineapple, beeswax. Straw yellow color: fresh and vibrant despite a moderate alcoholic presence. PAIRING: Raw seafood, pasta with sea urchins, fried vegetables and fish. Also good with white cheeses and with vegetables in pinzimonio.
