Cometa Sicilia Menfi DOC 2019
A great white wine from grapes of Southern Italy, able to compete with the great whites of the world: this is the initial project. For this reason, experimentation on Fiano, a noble and ancient variety of Campania origin, began in the 90s. This is how the Cometa was born, which best expresses the characteristics of this extraordinary vine in an original and unique way. Intense and fruity aromas, its great structure and minerality make it today one of the reference white wines of Southern Italy.
VINEYARDS: Gurra, Pantry VARIETY: Fiano TYPE OF SOIL: Pantry medium deep, scarce skeleton almost absent, moderately calcareous. GURRA calcareous and very clayey. ALTITUDE: 75 meters above sea level YIELD PER HECTARE: 75 quintals TRAINING SYSTEM: spurred cordon. PLANT DENSITY: 4,500 plants per hectare. HARVEST PERIOD: DISPENSE 30 August-10 September. GURRA 15-19 September. VINIFICATION: after manual harvest the grapes are crushed and destemmed and sent to the press. The must thus obtained ferments in steel for 90% and for 10% in 225 liter barriques. After a period of aging on the fine lees, it is assembled and prepared for bottling. BOTTLING PERIOD: first ten days of March. ALCOHOL CONTENT: 13% vol. TOTAL ACIDITY: 5.25 g / l. PH: 3.30. AGING CAPACITY: to drink immediately or to age for many years, up to 15. BOTTLE SIZE: 0.75 l. ORGANOLEPTIC NOTES: Fiano in purity from calcareous-clayey soils that help to enhance the aromatic markers of the Mediterranean scrub typical of this vine. Thus, between the broom flower and the thyme, you can find the delicate scents of chamomile, hay, mango and pomelo. Mineral palate with traces of vibrant flavor that shake and quench your thirst. Then the rhythm changes to become slower and more harmonious, an invitation to sip this signature white with the right calm while fully enjoying every nuance. The finish gives a silky tactile sensation with a very refined aftertaste of ripe apricots, almond blossom and basil leaf. PAIRING: Without being afraid of banality with a red snapper caught and placed on the grill.
