VINIFICATION The must obtained by soft pressing of the grapes, after 24 hours contact with the skins, at a low temperature, is fermented with selected yeasts at a controlled temperature. AGING In stainless steel tanks for 6-8 months. ORGANOLEPTIC CHARACTERISTICS View - bright cherry red. Smell - floral, intense; with fruity aromas, hints of cherry, blackberry and currant stand out. Taste - intense, harmonious and fragrant, with excellent persistence. PAIRINGS Delicate first courses and white meats, semi-aged cheeses. Terrific with fish soup. NOTES This is a Rosato to which we pay particular attention. It is vinified in small quantities, only in the vintages that guarantee the quality we desire: each harvest has its peculiarities.
