TYPE OF SOIL Red soils, rich in iron and poor in organic material, sandy, pebbly and not very permeable.

VINIFICATION Destemming and pressing with rollers. Maceration and fermentation at a controlled temperature of 20-25C ° in stainless steel for about 7 days with frequent delestages. Once all the sugars have been carried out, the maceration continues for another 7 days to increase the extraction of essential tannins for the subsequent aging phase. Racking. Wine alcohol up to 19% is added.

COLOR Topaz with warm amber reflections.

BOUQUET Intense aromas of coconut, vanilla, tobacco, toast, apricot preserve, honey and licorice.

TASTE Excellent acidity, dry, savory and long finish

NOTES A great vintage characterized by exceptional climatic conditions especially for the Grillo grapes. A warm winter followed by a hot summer with very dry winds allowed a harmonious development of the phenological phases. The few rains in early September allowed the ripening process to take place almost perfectly and the grapes harvested in late September were opulent in sugars and aromas. As for the vinification of Marsala Vergine, cooked must, concentrated must and siphon cannot be added, which is a must derived from almost dried grapes with the addition of wine distillate. This Marsala is proposed in a completely original and modern style, with a dry, fresh and salty taste, it ages in French barriques and gives a surprising and satisfying sip.
