The harvest begins at the end of September. A part of the grapes is left hanging on the vines until November, weather permitting, a part is exposed to the sun on wooden trellises, a third part is exposed to noble rot in airy and cool rooms. The vinification begins with an extremely soft pressing of the grapes in an old wooden trellis. After a brief natural clarification in stainless steel tanks, fermentation and aging take place in small oak barrels and are constantly monitored over the two-year period. In the tradition of the winemakers of the past, a grappa is distilled here too from the remaining pomace, to ensure that it rots as little as possible, a task that is taken over by the renowned Berta distillery.
