Particularly suitable as an aperitif or with summer appetizers, first courses, delicate fish. The grapes are harvested manually in the vineyard and carefully placed in boxes for transport to the cellar. They are pressed immediately, left for 5 hours with the skins and then fermented at a controlled temperature of around 15°C without the aid of selected yeasts. At the end of the fermentation process, the wine is left to clarify with static settling until the end of winter. It remains in stainless steel vats until spring, when it will be bottled: after about 1 month of aging in the bottle, it will be ready to drink.
