PRODUCTION AREA Montepulciano (Siena). At 300 m above sea level
VARIETY Malvasia, Trebbiano and Grechetto
TYPE OF SOIL Alluvial origin, rich in skeleton and sands.
VINIFICATION The juice obtained is left to ferment in small barrels of varying capacity between 20 and 50 liters sealed with sealing wax. The must, thanks to the presence of selected yeasts from production to production, ferments in an oxygen-free environment.
COLOR Amber yellow.
BOUQUET Notes that recall wood and vanilla, passing through aromatic and medicinal herbs; then take over fruity scents.
PAIRINGS Excellent with foie gras and with different types of blue cheeses, it is also perfect as an accompaniment to different desserts or even alone, as a meditation wine. It gives its best with dry pastries.
TASTE From the velvety sip, which emerges for its excellent persistence, never cloying.
NOTES Refinement, softness and a great range of aromas: these are the three characteristics that identify the Familiae of the Boscarelli farm, a Vin Santo di Montepulciano DOC that can be really drunk with great pleasure. Cut of Malvasia, Trebbiano and Grechetto, the grapes, naturally dried, ferment in sealed kegs of different sizes.
AGING The first opening of the kegs takes place after about 4/5 years. In seasoning, according to tradition, thermal changes are important.
