Obtained from selected Cococciola grapes, it carries out a spontaneous alcoholic fermentation with the help of a "pied de cuve" obtained from grapes harvested in the vineyard a week before the harvest. Alcoholic fermentation is carried out in terracotta amphorae and subsequently, shortly before the end, the product is bottled. The wine continues aging in horizontally placed bottles for at least one year and, once the “disgorging” moment has been reached, the coarse lees are removed before being marketed. The wine has a straw yellow color, with a slight haze given by the residue not removed by filtration. On the nose, light and fresh floral and citrus scents, on the palate it is perceptible a clear freshness, minerality accompanied by a delicate effervescence due to the fermentation concluded in the bottle.

All this makes the Ancestral Khaos a perfect accomplice for aperitifs, whether they are based on appetizers or more important courses. But also for a fish-based dinner, starting with appetizers. Because in the beginning, we know, it was the Khaos.
