We have dedicated our first gin to majella, our mother mountain; we have captured the most characteristic essences and created a balanced and unmistakable distillate. The botanicals that make up the final aromatic profile are macerated individually to extract the aroma, this is essential if you think of the different molecular structure between the "epigeal" part (the thyme leaflet), and the "hypogeal" part of the plants. The final distillation takes place in a bain-marie alembic which, in a slow and delicate way, extracts the alcoholic vapors without "cooking" the botanicals to enhance their aroma.
