Obtained from the sole processing of Carolea variety olives, a golden yellow oil with greenish reflections in its youth, with a very intense aroma and herbaceous aromas. In the mouth it is delicate but firm and the aftertaste is bitter with almond notes. Excellent as a raw dressing, on salads, steamed vegetables, grilled meat and fish.
