Extra virgin olive oil produced with olives harvested by hand in the Lunae olive groves, located on the hills of Luni and Castelnuovo Magra, in the extreme Levante Ligure and in full respect of a millenary tradition, testified by the presence of oil mills dating back to Roman times. The cultivars are typical of the area: Razzola, Leccino and Moraiolo; the extraction takes place at low temperature, by means of mechanical procedures aimed at safeguarding its organoleptic characteristics and primary aromas.Intense golden yellow color with decisive green reflections, it shows a fruity, fresh and light nose, with clear hints of apple, almond and artichokes. Soft on the palate, pleasantly spicy, sapid and almost imperceptible in the bitter note, it has a good structure and excellent persistence.Raw on a seafood or egg salad, on grilled fish or to make fried shellfish, it is perfect for creating a mayonnaise or a mortar sauce.
