The nose is clean, perfect, very clear, complex and of excellent depth. Black fruit jam, blueberry syrup, essential oils, lavender, mint, dried figs, black olives, a vegetable of pepper and wild flowers, iodized hints, dark chocolate, in the distance tertiaries pounding and ready to explode like a cigar box, fermented tobacco, leather, really complex and ever-changing. The sip is coherent, shaken by a thick tannin but still well inserted and refined, rich in extract, almost fleshy, freshness and minerality make everything perfect! A wonderful picture that slowly closes on notes of ripe fruit, morello cherries in alcohol and rum chocolate. Sommelier's advice A wine that accompanies structured itineraries very well, to be combined with first courses and risottos with red meat-based sauces, important meat second courses with a good succulence and an evident sapidity, baked meat, soups, aged cheeses.
