After destemming and light crushing, the grapes are left to ferment in steel vats. After 36/48 hours from the beginning of fermentation, the temperature is lowered to around 22°C and then it gradually rises to 26-28°C during the 5 days of maceration. At the end of the fermentation the wine undergoes the normal decanting and in the following spring it is placed in barriques where it remains for about 5/6 months. Maturation in steel continues. Malolactic fermentation usually takes place at the end of October.
Vignanello Rosso Controlled Designation of Origin Alcohol content: 12.50% vol. Grapes: Sangiovese 50%, Ciliegiolo 30%, Merlot 10%, Cabernet 10%. Obtained from selected grapes in a restricted DOC. After about five days of fermentation on the marc, it is placed in steel containers to await refinement in barriques the following spring. Bright red in colour, slightly garnet, it has a vinous and characteristic aroma, a dry, round, full-bodied, harmonious flavour. It must be served at a temperature of 18-20° C. It goes perfectly with roasted meats and game in particular.
