Grapes: Montepulciano 100% Alcohol: 15.00% vol Format: 75cl Pairings: It goes well with red meats, grilled lamb, mutton, pork, dry and aged cheeses. It is also a meditation wine. Produced in favorable years, it is a long-lived wine that improves over the years.
FEATURES OF THE PLANTS Espaliered with over 5,200 vines per hectare (2.4×0.8 metres) with an average production of 70-80 quintals per hectare. HARVEST AND VINIFICATION PERIOD The harvest is late and takes place manually in the last ten days of October. The grapes are destemmed, softly pressed and vinified in stainless steel fermenters at a controlled temperature of 29-30° C. The maceration period, in which the skin remains in contact with the must, is quite long (about 20-25 days). Once the alcoholic fermentation is complete, the malolactic fermentation begins, at the end of which the wine is decanted and left to age for 2 years in barriques. Once bottled, it ages for a further 24 months in our caves before being placed on the market.
