Grapes: Barbera Vineyard: Very suitable soil that tends to be decarbonated with a neutral reaction, mainly clayey loamy or sandy loam, evolved, yellow or reddish in colour. Hilly position above 300 meters above sea level with medium-high slope. Very sunny and with remarkable climatic characteristics. Average age of the vines over 30 years, interesting ecological balance due to the presence, in the immediate vicinity, of very useful small wooded areas. Production Technology: Traditional and manual cultivation. Once fully ripe, a selective and graduated harvest is carried out with the careful choice of bunches and the use of small perforated boxes in order to obtain an optimally intact harvest. The grapes are pressed and immediately fermented with specially selected house yeasts, in small temperature-regulated containers to then conclude, as per tradition, the second fermentation and refinement in small exhausted oak barrels for 4 months to favor olfactory cleanliness.
