Plant density of 5000 vines per hectare and production of 60-70 q. Harvest: manual in small 20 kg baskets and selection of the grapes upon arrival in the cellar. Last ten days of October Vinification: after a short cold maceration of the grapes, fermentation takes place in steel vats at a controlled temperature, 15-18 days at 23°C. Aging on the fine lees for a natural stabilization of the wine. Colour: ruby red with a purplish edge Smell: intense with light vegetal notes typical of the vine Taste: fresh and pleasantly soft, well balanced Storage: protected from light, with horizontal bottle, controlled temperature and humidity 17°C –70%. Serve at a temperature of 16°C Pairings: pasta with grouper ragout, bluefin tuna steak. Stewed lamb, goat cheese cream.
