Pilùna is a monovarietal of Primitivo. We are a few kilometers outside the primitive DOC of Manduria, therefore Pilùna falls within the disciplinary of the IGT Salento. The primitive name derives from "first native" as it is the first red berried variety to be ready for harvest. The name Pilùna indicates the ancient tuffaceous containers in which oil and wine were kept.

Description
Piluna is a primitive wine produced at the Castello Monaci winery. It is produced with Primitivo grapes harvested from vineyards planted with Apulian sapling and Guyot on deep and dry clayey soils with the presence of tuff limestone, in the Salice Salentino area in the province of Lecce. The harvest takes place by hand only from dawn to nine in the morning, when the temperature is cooler.The vinification is carried out at a controlled temperature with about two weeks of maceration and frequent pumping over. Once the malolactic fermentation has been carried out, a part ages for 6 months in French barriques and with different toastings, while the rest remains in steel.Piluna is a wine characterized by a dark purple-red colour. It has an ample aroma of ripe grapes, with hints of pepper and vanilla and with hints of Mediterranean scrub. On the palate it expresses a robust, concentrated, soft but well-balanced flavor with a gentle aftertaste of jam of small black fruits and long-lasting licorice. To be served at a temperature of 16°C.Piluna is one of the best wines that can be found in Italy for value for money. A wine without too many frills, but perfect for those who still want to feel the true character of the Primitivo del Salento
