Il Sole dei Padri "Dei Principi di Spadafora" is a pure Syrah perhaps something more than 100%, an organic red wine that comes from a single vineyard, 400 meters above sea level. Production 7,000 bottles. This Syrah is the offspring of the previous one, even if it has now surpassed it in importance.
The Syrah vines for the Sole dei Padri red wine grow in the sandy and clayey vineyards of Spadafora in the Virzì district in Monreale southwest of Palermo in western Sicily.The grapes are grown at a height of 450m above sea level and are subject to a temperature variation of 10-15°C, between day and night, which improves the acid-sugar balance in the grape.The grapes were harvested manually, selected and destemmed. The grapes were fermented and macerated on the skins in stainless steel tanks. After fermentation the wine was transferred to concrete tanks where the malolactic fermentation took place, after which a part of the wine was stored in small 225 liter oak barrels in the aging cellar, and another part was refined directly in concrete tanks. The wine aged for 1 year in oak barrels and then 24 months in the bottle.Longevity 5-10 years.
