From a long tradition of wine production comes the Niccolò V Rosso DOC of Cantina Lunae Bosoni, a company that has been carrying on its business in the Lunigiana area for 5 generations. The Sangiovese, Merlot and the autochthonous Pollera Nera vines that make up the mix for the production of the Niccolò V Rosso DOC wine are grown on pebbly soils with the Guyot system and after the harvest the grapes ferment at a controlled temperature, macerating on the skins for 12 days ; the refinement takes place for 12 months in French oak barriques, followed by a further 6 months of refinement directly in the bottle. After this period, the wine can be enjoyed immediately, but it can rest in the cellar for up to 5 years to improve. Ruby red wine with violet hues, the Niccolò V Rosso DOC has an enveloping sip and a pleasantly dry finish, which embodies the character of the territory and best represents the local winemaking tradition.
