The grapes are harvested by hand, destemmed and pressed. Fermentation takes place in stainless steel tanks at a temperature of 26-28°C with enzymes and selected yeasts. Numerous pumping over and punching down are done with the pistons with which the tanks are equipped to facilitate the extraction of color and tannins. Malolactic fermentation takes place at 100%. Aging: 30% in stainless steel tanks; 70% in French and American oak barrels for 8 months.
