Maceration on the skins for about 15 days. Daily pumping over starting from the second day of fermentation. Spontaneous malolactic fermentation in temperature-controlled steel tanks. Maturation and refinement In some vintages, a part of the mass can mature for a period of three months in second passage Allier barriques. A suitable refinement in the bottle follows. Recommended pairings To be enjoyed as a pleasant aperitif or in combination with simple or medium-structured dishes such as cured meats, fresh or semi-mature cheeses, pizzas with delicate flavors, pasta with light sauces, red meats, poultry, roasts.
