Cavaliere Sardo is the red that the Cantina Sociale di Mogoro Il Nuraghe wanted to dedicate to Leonardo Alagon, the last Marquis of Oristano, who in 1470 waged battle against the Aragonese militias by defeating them in the plain of Uras, the last heroic battle for the independence of Sardinia from the Aragonese crown before the definitive defeat, in 1478, in Macomer, where the Marquis was definitively defeated.

Description

Cavaliere Sardo is a Terralba DOC Bovale Riserva, obtained exclusively from the homonymous vine, capable of giving concentrated and vigorous wines, with a bright color, from vineyards grown on the sandy-clayey soils of the Terralbese with yields not exceeding seventy quintals per hectare.

The nature of the soils of Campidano di Terralba, sandy and clayey, combined with the climatic peculiarities of this part of Sardinia, hot tending to arid, cool during the winter and in the evening, when the fresh breezes from the sea blow inland by releasing salts on the ground and on the berries, it contributes significantly to producing grapes rich in sugar and substance, suitable for producing fatty, alcoholic and rich in aroma wines. The harvest, carried out between the end of September and the beginning of October, is carried out manually, and the filled boxes of grapes are quickly transported to the cellar for vinification. The bunches are destemmed and crushed and the must is left in contact with the marc for about fifteen days, at a temperature of about 27°C. During this phase, frequent pumping over and delastage take place, to facilitate the alcoholic fermentation: once this phase is completed, Cavaliere Sardo ages for twelve months in French oak barriques, in order to increase its structure and aromatic complexity, before final refinement bottled and put on the market. Cavaliere Sardo is presented in the glass an intense and impenetrable ruby red, with violet reflections, and great consistency. The nose reveals a bouquet where violets prelude to intense aromas of red fruit, such as cherries and blackberries, ripe and in jam, accompanied by sweet spicy notes and some hints of Mediterranean and balsamic aromatic herbs. In the mouth, Cavaliere Sardo is a round, full-bodied wine with a notable glyceric content, enlivened by freshness and sapidity and by soft and smooth tannins; the aromas, of great intensity, persist for a long time, renewing the pleasure. Cavaliere Sardo is a wine to pair with large meat dishes, such as mixed boiled meats; one could think of a regional dish such as carbonade, a meat stew in red wine originating from the Val d'Aosta, or pork fillet in balsamic vinegar, a dish where the acidic tendency of the sauce is balanced by the softness of this sumptuous red.
