PRODUCTION AREA Buttrio and Premariacco (Udine)
VARIETY Refosco dal peduncolo rosso 70%, Schioppettino 10%, Pignolo 10%, Merlot 10%
VINIFICATION 50% of the best bunches of refosco and all the Schioppettino are hung on a ventilated attic in the hills to undergo 4 to 8 weeks of drying and thus favor the concentration of the notes of each single berry. The bunches are then de-stemmed by hand and gently crushed. Maceration and fermentation take place in open 500-liter tonneaux. The pressing is done by hand to make the extraction as delicate as possible. A vertical press extracts the soft tannins and reduces peel-to-peel friction.
COLOR Intense garnet red.
BOUQUET The nose is rich in notes of chocolate, coffee, spices and ripe red fruit.
PAIRINGS It goes well with very robust dishes, such as stewed wild boar or grilled rib of beef.
TASTE The palate is of excellent structure, in which the sip is energetic and vigorous, enlivened by a pleasant balsamic vein and a firm tannic texture.
NOTES The Calabrone is a reserve that is produced only if an excellent harvest is followed by a dry and mild September and October, ideal conditions for subjecting part of the bunches to drying. As in the case of Amarone della Valpolicella, the drying process intensifies the flavors and softens the natural tannic grip of the grapes.
