VINIFICATION 60% yield in must, fermentation with maceration of the skins by pumping over for at least 12 days.

BOUQUET The nose is intense and deep, with harmonious notes of cherry that blend well with the vanilla scents coming from the aging in barriques.
PAIRINGS Red meats, aged cheeses, well-seasoned first courses
TASTE A pleasant sensation of ripe red fruits emerges on the palate. The delicate tannic structure makes this wine pleasant and elegant.
NOTES It is a Pinot Noir with a lava character that has a good persistence on the palate.
AGING 1 year in second passage French oak barriques with spontaneous malolactic fermentation, subsequent aging in the bottle for 24 months.
