TYPE OF SOIL Sandstone rock formation called Macigno del Chianti characterized by a thick layer of reddish or ocher sand that derives from the disintegration of the sandstone. This type of soil, particularly poor in nutrients and water, forces the plants to explore the soil in depth, therefore it is well suited to the production of high quality grapes.
VINIFICATION Fermentation in stainless steel tanks with a capacity of 5 and 10.5 hl
TRAINING SYSTEM Spurred cordon
COLOR Intense ruby red.
BOUQUET The nose reveals suggestive aromas of red fruit and plum with notes of licorice.
PAIRINGS Perfect with furred or feathered game and with grilled red meats. Gives its best with stewed tripe.
TASTE Refined wine with a complex bouquet.
NOTES Ad Astra is the second wine from Maremma and the name draws its origins from the Latin motto Per Aspera Ad Astra through the roughness to the stars. An aphorism that also applies to great wines that require an arduous and loving work in the vineyard to create wines with character. Ad Astra is the younger brother of Nectar Dei and is the fruit of the same vineyard, planted on the sunny hills of the Mongibello delle Mandorlaie estate south of the Maremma.
AGING 12 months of aging in French oak barrels and tonneaux, followed by a few months in concrete to assemble the various varieties and wooden barrels. Finally, further refinement in the bottle
