VINIFICATION The grapes that make up the sparkling wine are 85% Chardonnay and 15% Pinot Noir and are strictly hand-picked during the harvest. The best bunches are brought to the cellars of the company and subjected to soft pressing. The vinification is divided into two phases, a first fermentation in steel using pied de cuvée of indigenous yeasts. While the refermentation in the bottle with fermentation takes place with the Classic Method and follows an aging of 30 months on the lees.
