Classification: Typical geographical indication wine from overripe grapes Origin: Audarya vineyard Soil: calcareous-clayey soils at 200 meters above sea level Climate: Mediterranean, low winter rainfall and ventilated and sunny summers Average age of the vines: 20 years Training system: low espalier tree, planting density 5000 vines per hectare and production of 35 – 40q. Withering: natural with the cutting of the fruiting head on a supporting wire. Harvest: manual in small baskets of 10 kg each and selection of the grapes upon arrival in the cellar. Second ten days of October. Vinification: maceration on the skins for 36 hours, soft pressing and slow fermentation in temperature-controlled steel vats. Colour: intense golden yellow Smell: dehydrated apricot, wildflower honey and Mediterranean scrub Taste: sweet and well balanced, with a natural freshness due to overripe Storage: protected from light, with horizontal bottle, controlled temperature and humidity 17°C – 70% . Serve chilled at a temperature of 9-11°C. Pairings: Bisai goes very well with typical Sardinian sweets made with almond paste, pine nuts and raisins.
