TYPOLOGY White wine - Falerno del Massico DOP PRODUCTION AREA San Castrese Sessa Aurunca (CE) VARIETY Falanghina 100% (Falerna biotype) SOIL TYPE Volcanic with a good supply of phosphorus, potassium and microelements. VINIFICATION Cold maceration of the grapes to obtain a greater aromatic and structured extraction. This is followed by a soft pressing and cold decantation of the must which subsequently ferments at a controlled temperature of 10/12°C for 15% in terracotta amphorae and for the remainder in stainless steel tanks where it remains in contact with the yeasts for about 3 months. CULTIVATION SYSTEM Simple guyot with about 6/8 buds per plant COLOR Straw yellow BOUQUET Deep and elegant bouquet, it reveals hints of ripe fruit among which pineapple, mango, passion fruit, green apple, mandarin and peach stand out. Modulated sensations of orange blossom, broom and Scots pine. PAIRINGS Serving temperature: 10-12°C FLAVOR The flavour, balanced, velvety, rich and persistent, has a marked finesse and personality. AGEING Refinement in stainless steel for over 3 months.
