PRODUCTION TECHNOLOGY The wine obtained from the pressing of the Chardonnay grape is bottled in April of the year following the harvest, where, after chaptalization and the immediate addition of batch yeasts, it undergoes refermentation. Once this process that gives rise to the characteristic foam is completed, the maturation on the lees follows which lasts about 36 months. During this period of permanence in the bottle, the wine abandons its herbaceous characteristics and takes on a texture that makes it a very delicate and signature bubble. The "clarification" and "disgorgement" operations prepare it for consumption, which takes place about three years after the harvest.
TASTING NOTES Froth with very fine chains that envelop a light straw color with still greenish reflections; the scent is structured with sensations of fruit, lime, aromatic herbs and honey, acacia flowers which enhance the nature of the Chardonnay. Nice entry into the mouth which makes it very seductive, long and harmonious. The taste is the main part of this Blanc de Blancs as it expresses the true characteristics of a great grape in a very hostile territory.
GASTRONOMIC COMBINATIONS Pleasant to drink on its own; as an aperitif and if accompanied with shellfish, raw fish, fresh cheeses.
