VINIFICATION After the complete stripping of the bunch area, the grapes dry directly on the plant and are harvested late. After a further selection of the bunches, the grapes are pressed and the clean must is left to ferment in stainless steel barrels.
COLOR Brilliant golden yellow of medium intensity. BOUQUET Wide and intense, with marked notes of candied fruit, dried figs, citrus fruits, dehydrated apricots and a pleasant sensation of honey and biscuits.
PAIRINGS Excellent partnership with dry pastries and fermented and seasoned cheeses. The combination with different patés is also remarkable. TASTEFull, rich and complex, pleasant and persistent, it has a good balance between structure and acidity.
AGING Aging in French barriques for at least thirty months, followed by a period of aging in the bottle before being marketed.
