Vinification The manually harvested grapes arrive intact in the cellar, after destemming and crushing they are subjected to soft pressing. After cold static clarification and inoculation of selected yeasts, the flower must ferments at a temperature of 18°C for about 20/30 days
Organoleptic characteristics Straw yellow color with greenish reflections and characteristic fruity aroma mixed with floral notes. Balanced flavor supported by a slight acidic note which increases its aromatic freshness.
Accompaniments To be successfully combined with fish-based dishes and delicate meats, such as "Shrimp and lemon risotto", "Sushi and Sashimi", "Mussels au gratin", and again to accompany "fresh cheese-based snacks".
