Denomination Costa d'Amalfi DOC Grapes Falanghina, Biancolella Vinification The grapes are harvested manually and arrive intact in the cellar, after destemming and crushing they are subjected to soft pressing. The free-run must, after cold static clarification and inoculation of selected yeasts, ferments at a temperature of about 15° for about 20/30 days. Organoleptic characteristics Pale straw yellow color and delicate fruit scent that brings back the unmistakable Mediterranean smells of the area of origin. The flavor is broad and balanced with a slight dominance of the acidic note to support the freshness of the aromas. Pairings It goes well with a good seafood appetizer, shellfish and steamed or grilled fish. Excellent with a succulent and fragrant "Risotto allo scoglio", or with a "Steak of Amberjack seared with Amalfi Sfusato". Also balanced with preparations with vegetables and fresh cheeses such as "Bufala Campana DOP" mozzarella.
