The La Rocca vineyard is located on the hill of Mount Rocchetta, close to the medieval Scaliger castle of Soave. La Rocca enjoys a particular microclimate, which makes it possible to obtain a wine with a unique and unreproducible bouquet and gustatory notes, typical of a pedigree wine. Innovative, since its debut in 1978, it has marked a deep groove in the territory, becoming an undisputed symbol of quality and tradition.
Denomination Soave Classico DOC. Geographic location Hilly area of the classic Soave. 100% Garganega grapes. Age of the vines Plants from 10 to 50 years old. Vineyard Limestone soil, rich in clay, altitude 200 - 300 mslm , south-west exposure. Yield Per hectare: 60 hl (2 kg per plant). Training system Spurred cordon trellis with 5,000 vines per hectare. Defense method Certified organic viticulture. Gem load 8 gems per vine. Harvesting method Manual harvesting, often with double passage, to select the ripest grapes at the end of October. Vinification technique Destemming and pressing of the grapes, short maceration and selection of the must. Fermentation in 2500l barrels and 500l casks (16°-18° C). Organoleptic test Colour: sunny yellow, brilliant and intense - Aroma: rich and ample bouquet, with hints of ripe fruit with hints of melon and mango, slightly spicy - Taste: full, round, velvety, perfect balance between fruity and mineral sensations, long finish and persistent - alcohol content: 13° - acidity: 5‰ – 5.5‰. Refinement The maturation in wood lasts about 15 months. During this period the wine in contact with the noblest lees reaches a complex and rich bouquet. Stop in glass before marketing. Pairing It goes well with complex dishes also with savory garnishes: risotto with porcini mushrooms, with white celery, pumpkin and almonds, Vicenza-style cod, fish dishes, salmon, scallops and crabs.
