Pacherof's Sylvaner is a semi-aromatic wine from Alto Adige characterized by a variegated bouquet on the nose, a prelude to a enveloping and fresh sip, with excellent incisiveness. Sylvaner, a variety that in the Isarco Valley - where the winery is located - manages to express itself on noteworthy qualitative levels, is cultivated with great attention, taking care to bring the perfectly ripe grapes to the harvest. A refined and precise bottle, to be savored with gusto down to the last drop.Pacherhof's Sylvaner wine originates from those owned vineyards located 650 meters above sea level, characterized by an average age of the plants of about 35 years. The exposure is ideal, facing south, and the land is characterized by a subsoil composed of sand, gravel and clausite, rich in minerals. The temperature range between day and night is excellent. Remember that we are in a decidedly Nordic wine-growing area, ideal for increasing the aromas inside the Sylvaner grapes. The must ferments in steel containers and subsequently the wine is decanted for a few months into wooden barrels, where it remains to mature.The Pacherhof Sylvaner presents itself to the visual examination with a straw yellow color, slightly more tending to greenish in the nail. The nose opens on notes of grass and cut hay, then enriched by more fruity references and slight hints that veer towards the floral. On the palate it has a light body tending to medium, with a refreshing and fruity sip that highlights the general harmony and elegance that reign during the drink; finally it closes with a nice gustatory persistence. A bottle that finds its gastronomic fulfillment in combination with sea fish and shellfish: if you want a spot-on combination, try it with spaghetti with clams.
