The grapes used for this Classic Method Spumante are 100% Ribolla Gialla, grown on clayey soils; once hand-picked during the harvest, the bunches are pressed and exposed to the air, so that the hyper-oxygenation leads to the stabilization of the product, preparing it for the long phase of aging in the bottle. once the alcoholic fermentation is complete, the wine rests in steel on the lees. The mass thus obtained is then filtered to prevent malolactic fermentation and before arriving at the second fermentation, white wine aged in barrique is added. This is followed by a rest on the lees for at least 24 months, disgorgement and further rest for another 6 months.
