The grapes are harvested by hand into small containers, destemmed, crushed and placed in the closed pneumatic press, where they are cold macerated for 12 hours. The must is extracted by soft pressing, naturally clarified and partially fermented in stainless steel tanks at 12-14°C and partially in French oak barriques with selected yeasts. Then it is left to mature for about 6 months. When the wine fermented in barriques is decanted, the barriques are filled with the wine fermented in steel. This is left to refine for 2 months. The wine coming from the different containers is blended and bottled after two months; then aged in the bottle. No malolactic fermentation.
