An indigenous vine with a centuries-old history, Ribolla Gialla has seen its fame grow since the Middle Ages and Renaissance. Its cradle is the vineyards of the Colli Orientali del Friuli which give the wine delicacy, freshness, liveliness and great refinement.
Mainly trained in Guyot, the vines of our Ribolla Gialla have their roots in the Ponca (Cormòns flysch in technical terms), soil composed of marl and sandstone of Eocene origin stratified under the seas over the millennia, which gives our wines unique flavor and minerality. The harvest took place during the month of September. The healthy and perfectly ripe grapes were harvested by hand, in small boxes, to preserve the integrity of the berry. Delicately destemmed and left to macerate for a short period, it was then softly pressed, and the must thus obtained was clarified by decantation. This was followed by fermentation at a controlled temperature in stainless steel containers. At the end of fermentation, the wine was kept on the yeasts for a few months, to increase its complexity, creaminess and suitability for aging. Once bottled, rest in thermo-conditioned rooms for refinement.
