Piasa Rischei is the wine produced solely with Moscato grapes, left to dry on the vine and harvested at the end of October, a part of the bunches is still left to dry on mats in an orchard. After fermentation, the wine is aged in barriques for 24 months. A passito balanced between freshness and sweetness. Great evolutionary capacity. Perfect to combine with cheeses and fois gras.

Description

Grape: Muscat white withered. Vineyard: Limestone-marly soil that tends to be loose (Miocene-Langhian). Hilly position with a slope greater than 50% bounded by stone walls and surrounded by plum, almond and rosemary trees. South-West exposure. Altitude above 450 meters slm level Low Gujot training system with more than 8,000 vines/Ha. Average yield in hectoliters <18/hectare. Production Technology: The harvest begins at the end of September and lasts until late November, collecting the bunches and grapes infested with Botrytis nobile by successive selections. A part of the grapes is further naturally dried on mats in the loft. After a slow pressing of the overripe grapes, the fermentation is activated by the mother yeast of the previous year and continues slowly for over 24 months in small oak barrels. Bottling takes place in the spring of the third year after the harvest. Organoleptic Characteristics: Deep yellow colour, with golden reflections. Olfactory entrance with a rich, ripe, apricot fruit. The "muscat" root is evident, enriched by spicy and roasted notes. Rich and creamy on the palate: not only sweet, but now alcoholic, now almondy, spicy and citrus. A sweet, sumptuous dessert, but at the same time profiled by a fresh and fragrant acid vein. A pleasant wine, which closes long, with an echo of vanilla and white chocolate. Constitutionally long-lived, it maintains a great gustatory balance for many years. Gastronomic Pairings: Meditation wine, blue, goat, aged cheeses, Foies Gras or dry pastries. Serve in tall crystal glasses at 8° - 12°c. Oenological characteristics: Effective alcohol content: 11.5 - 12% vol. Residual sugar: ~ 140 g/lt Total alcohol content: ~ 21% vol.
