Description

GROUND: Hilly bottom, made up of stratified marls and sandstones depth and surface colluvials HARVEST: Manual, the harvest period is visually evaluated at the achievement of optimal ripening of the grapes, which in this area occurs from the first to the second ten days of October. VINIFICATION: The grapes are destemmed trying to keep as much as possible the berry intact and thus sending it to the barrel for fermentation. Manual punching down is done until reaching the desired color and tannins and finally it is pressed with traditional press. The wine thus obtained is left to settle for a day, after which it returns to the oak barrel for the following 24 months of refinement. AGING: 2 years in oak barrels and 12 months in the bottle CHARACTERISTICS OF THE WINE: Light garnet ruby red in colour, but lively and fascinating. Winy, fruity, reserved bouquet, which opens with a range of light but very pleasant tastes. Pignolo is a whole wine particular, contained and mysterious, as if afraid of being discovered.
