Sweet wine produced from Malvasia (90%) and Trebbiano (10%) grapes harvested by hand when perfectly ripe and naturally dried for about 120 days in a well-ventilated place. After pressing, the must is decanted into oak and chestnut barrels with a capacity ranging from 40 to 180 Lt. , sealed and placed under the roof, in an environment subject to seasonal temperature variations. Here it ferments and rises slowly for 6 years , with evaporation of 40% of the initial content, with a final yield of vinsanto of 10-12% on the initial weight of the grapes. Before bottling, a drop by drop filtration in Dutch canvas colas is carried out. It is a wine suitable for very long aging , to be tasted at cellar temperature (10ºC). This wine does not contain added sulfur. Aged 18 months in bottle in our cellars .
