TYPE OF SOIL Soils of morainic origin, mainly composed of sand (80%) and, for the remainder, of silt. The clay content is minimal (at most 10%). In fact, these are sub-alkaline soils rich in skeleton, usually not very deep.

VINIFICATION Débourbage for discontinuous flotation. Start of fermentation in steel. Racking by gravity into tumultuous fermentation Tonneaux.

COLOR Intense straw yellow with golden reflections of excellent vivacity

BOUQUET The olfactory sensations open with citrus hints of mandarin and then of quince. The floral scents lead us to white flowers and wild thyme. A brushstroke of vanilla, hints of small pastries, nutmeg and coffee bean define the tertiary notes.

PAIRING First courses of fresh pasta with fondue and truffle. White game.

TASTE Mineral, savory, deep and persistent. The nose / mouth correspondence in the retro olfactory sensations is pleasant.

NOTES The bottle is an antique green Borgognotta, the shape and color underline the importance of the wine contained. The cork is made of natural cork, carefully chosen and analyzed to exclude any anomalous variations in the organoleptic impact of the wines. The label is 100% natural cotton fiber paper.
