PRODUCTION AREA Vineyards facing south-east, south-west in the municipalities of Chambave and Saint-Denis on the orographic left
VARIETY Muscat Blanc 100% or Muscat Petit Grains
TYPE OF SOIL Soils of morainic origin, mainly composed of sand (80%) and, for the remainder, of silt. The clay content is minimal (at most 10%). In fact, these are sub-alkaline soils rich in skeleton, usually not very deep.
VINIFICATION Pre-fermentation maceration for 24-36 hours, fermentation in steel tanks with temperature control carried out by selected indigenous yeasts.
TRAINING SYSTEM Guyot, sapling, spurred cordon
COLOR Brilliant golden yellow
BOUQUET Intense and persistent aromatic. Hints of sage, thyme and in the background a range of citrus sensations, above all the pink grapefruit, make up the extraordinary bouquet of this wine.
FOOD PAIRING Medium-aged fatty cheeses in local cuisine, otherwise to be paired with shellfish and even slightly smoked fish.
TASTE In the mouth the balance between the sensations: alcoholic and mineral acid, gives us a wine with an important structure but at the same time delicate and elegant. Hints of citrus and acacia flowers close the taste sensations.
NOTES After a careful selection of the grapes, a fermentation in steel tanks, the Attente is aged sur lies both in steel and in wood. This is how the olfactory and gustatory sensations of this Valle d'Aosta Chambave Muscat are modeled in an extraordinary way. On the nose, the still clear and precise aromatic plant blends with elegant mineral notes and citrus sensations: above all the pink grapefruit. The taste sensations are ample, complex, elegantly savory, in the end there are hints of citrus and acacia flowers.
AGING 40 months of which 12 in large barrels, keeping the wine on the fine lees of fermentation with frequent bâtonnages.
