VARIETY 100% Sangiovese vinified in white.
TYPE OF SOIL Clayey-skeletal soil, based on Galestro (clayey schist stone) and Alberese (marly limestone).
AGE OF VINES 10-15 years
VINIFICATION White vinification of black Sangiovese grapes by soft pressing with total elimination of the skins, to limit the extraction of color. Cryogenic fermentation follows for about a month and aging on the fine lees until bottling. Short refinement in the bottle.
TRAINING SYSTEM Spurred cordon and Guyot
COLOR Pale straw yellow.
BOUQUET Floral and delicate elderberry, light notes of sage and white fruit such as yellow peach and pear.
FOOD PAIRING Fish appetizers, shellfish and seafood crudité, first courses with white sauces, white meats and fresh vegetables in salads. Excellent for light cooking every day.
TASTE In the mouth, fresh, dry, with an evident mineral note. Gentle aftertaste with good acidity.
NOTES Original and unique example of white Sangiovese, with evident mineral notes, intense fruity tones, fresh citrus nuances, floral aromas that express themselves on an excellent base structure. With maturation it develops a round and enveloping taste. Good evolutionary skills.
