Sperone was our first wine produced in 2012; it is a blend of merlot, cabernet sauvignon and montepulciano which expresses the great varietal expression of the grapes, leaving plenty of room for the terroir. The grapes, harvested when fully ripe, are destemmed and fermented at 27' degrees, after which they undergo a 21-day post-fermentation maceration with submerged cap. Subsequently the racking and a soft pressing are carried out. A part of the wine is then aged in steel and another in used tonneau.
