Distilled by the Capovilla Distillery Since 1880, four generations have marked the history of the Pieropan company, each with different contributions in relation to the times and knowledge, always in the wake of tradition.
Type: white grappa Friuli Venezia Giulia Grapes: marc of Corvina, Corvinone, Rondinella, Croatina from the estate's vineyards Production area: the entire process takes place on the premises of the Capovilla distillery, under the supervision of the Italian Customs Agency, an Italian government agency responsible for guaranteeing the purity of alcoholic beverages. Soil: clay and limestone, altitude 350-500 m a.s.l. Southern exposure Vintage: 2011 Size: 50cl Alcoholic strength: 43% vol Distillation: Grappa di amarone contains marc (skin, seeds and stems) and water. There are no sweeteners, flavourings, artificial colourings or other additives. The must is distilled twice in a copper container in a bain-marie in quantities not exceeding 150 litres. After the second distillation, all residues and the remaining distillate are removed. The alcohol content at distillation is 70 %. It is diluted with pure spring water until it reaches 43% Refinement: it is stored for years in a stainless steel container for ageing Serving temperature: 10°-12°C Tasting notes Colour: clear and brilliant Nose: austere and complex, with fruity touches and more vegetal hints Taste: broad and complex, warm and persistent Combination: perfect to be enjoyed at the end of a dinner, during the most special evenings
