The harvest is done manually in the first half of October, so as to preserve the integrity of the olives and the fruity notes, the use of perforated boxes and immediate dispatch to the mill for milling, offer a further guarantee of quality. The extraction takes place cold with a continuous two-phase cycle, in order to preserve the peculiar characteristics and, in particular, the polyphenolic heritage of the raw material. Once the extraction is complete, to favor its natural decantation, the oil is stored in small stainless steel tanks and finally bottled.
