Serving temperature: 8-9° C Residual sugar 11 g/l DESCRIPTION OF PROSECCO SUPERIORE BRUT SAN BOLDO MARSURET WINERY The San Boldo pass hosts the vineyards where the Glera grape is grown, the absolute star of San Boldo Prosecco Superiore Brut Valdobbiadene DOCG from the Marsuret winery. The particular geographical position gives the product a characteristic unripe note as the cool currents artfully slow down the ripening of the grapes. The Glera doesn't need many introductions. Semi-aromatic, exuberant and crystalline, it is a vine whose origins remain shrouded in mystery. What we do know is that the first historical traces date back to the 16th century. San Boldo comes from a production process that follows the dictates of the Charmat Method. In the cellar, after the classic white vinification with spontaneous fermentation in steel vats, the base wine ages for a long time in the tanks before the second fermentation in the autoclave. After a further refinement period, the product is ready to be enjoyed. The first thing that strikes you about this Prosecco is its pale yellow colour, crossed by a fine and persistent perlage. The bouquet is incredibly elegant. The notes of the Golden apple intertwine their intense aroma with that of wild flowers and the sip shows a dry and intense character. An excellent aperitif glass, it elegantly accompanies any fish-based recipe.
