The wine of the Plenus line is obtained with a spontaneous fermentation by indigenous yeasts present on the skins and without added sulphites. The grapes destined for Plenus are harvested by hand, then de-stemmed and placed in steel tanks where the must together ferments on its skins for about 28 days with delestage followed by soft pressing. The refinement takes place in steel tanks on the fine lees for about 10 months and then bottled with screw cap with Tin Foil liner followed by a minimum refinement period in the bottle of 18 months. Plenus Montepulciano is an unfiltered and unstabilized wine and above all it does not contain any chemical additives in the cellar.
Tasting notes Marina Palusci 's Plenus Montepulciano at tasting presents an intense ruby red color with aromas of vegetal and fruity notes. On the palate it satisfies many tastes and it is easy to appreciate it for a unique smoothness that at the same time leaves a balanced aftertaste. Rich, vibrant, with moderate, soft and very pleasant tannins. It goes well with important meat appetizers but also savory first courses based on both pasta and risotto. Plenus Montepulciano is perfect with main courses such as lamb or game and to accompany aged cheeses at the end of a meal.
