Sensory notes Colour: Intense and luminous ruby red with violet reflections and a moderate consistency.
Smell: The sense of smell is characterized by impacting aromas of cherry, strawberry, raspberry and wild berries supported by an aura of vinosity that makes us experience the atmosphere of the cellar a little.
Taste: On the palate the protagonist is undoubtedly a not excessive softness, accompanied by a moderate warmth and well harmonized by an optimal freshness and tannins that barely whisper their presence. The olfactory scents in a delicate structural habitat are confirmed to the taste, outlining a long and pleasant persistence. Harvest Manual selection of the bunches picked at the end of September, beginning of October, in an old vineyard in Colonnella (TE) with optimal exposure and average yield. The terroir guarantees these grapes daily temperature ranges which, together with organic farming techniques, highlight the typical aromas and flavors of Novello from Montepulciano d'Abruzzo grapes.
Vinification A carbonic maceration lasting about 10 days in the classic stainless steel vats, followed by a short alcoholic fermentation for 24/48 hours, to then proceed with bottling in the total absence of oxygen.
How to match our Novello wine A light and fragrant wine that follows tradition hand in hand and which, thanks also to the joy it transmits, must never be missing. With any glass that allows it to show off its aromas and at a temperature of 14°-16° at the most, we imagine it on every occasion where there is a meeting or a party, with family or friends.
Aperitifs, appetizers, light and unstructured foods are perfect for pairing: think of the inevitable seasonal chestnuts, vegetarian dishes, white meats or even fish with red sauce or fresh cheeses.
